I had to get one more recipe posted before the end of the year! What better way to close out the year than with a cocktail? 

And not just any cocktail, but one that pretty much represents what this year has been. 

Sweet, salty, tangy, vibrant, dark, rich, happy, and thoughtful. A jalapeno margarita with pomegranate!

Are there any other words that can encompass every feeling and experience all rolled into one? 

That’s the kind of year it’s been. So let’s drink to that!

I came across Cranberry Jalapeno Margaritas a little while back, which is what sparked this idea. I love jalapeno in drinks, but most of the time they use fresh peppers. 

I wanted to go with something a little different. I also wanted the sweet flavor of pomegranate versus the sweet-tart of cranberries. 


What is a jalapeno margarita?

Don’t worry, it’s not a margarita made only with jalapeno peppers. It’s a margarita spiced up to your liking with either pickled jalapenos and their juice, also called brine. Or mulled fresh jalapeno slices.

I used pickled jalapenos. The tanginess of the brine works almost like a shrub to complement the drink.

Don’t want it too spicy?

Here’s the thing. It doesn’t have to be spicy! It’s the flavor of the pepper you want to go for, which is also why I used pickled. 

If you like spicy things (like me!), use regular sliced jalapenos. But if you’d rather skip heat, try the version you can find next to the regular in the supermarket labeled tamed. They are much milder and perfect in this drink. 

Even if your year has had some salty and dark, I hope there were some moments of sweet and vibrant too. And I wish you the latter and more in the New Year!

Pomegranate Pickled Pepper Margaritas

Pomegranate Pickled Pepper Margaritas

This recipe for pomegranate pickled pepper margaritas with jalepenos, gold tequila, and triple sec provides a twist on a traditional margarita with a kick.

Ingredients

  • Lemon wedge and salt for rimming glass
  • ½ ounce triple sec
  • ¼ ounce fresh lemon juice
  • 2 slices of pickled jalapenos, or more to taste
  • 2 ounces gold tequila
  • 4 ounces pomegranate juice
  • Ice
  • Pomegranate arils for garnish

Instructions

  1. Rub the rim of a rocks glass with the lemon wedge and rim with fine ground salt. 
  2. Add the triple sec and lemon juice to a cocktail shaker. Add the jalapeno slices and muddle until the peppers are well crushed.
  3. Add the tequila and stir well. Add the pomegranate juice and ice. Cover and shake for 15 to 20 seconds. 
  4. Fill the rimmed glass with ice. Strain the margarita into the glass. Garnish with pomegranate arils, then serve.
