Ginger Molasses Cookie Bars Recipe

I can’t get enough of ginger flavored treats during the holiday season. These cookie bars are a recreation of one of my favorite cookies made with fresh ginger and molasses!

This past summer, I discovered my favorite cookie. It’s sold at Blue Bottle Coffee in Oakland. I’ve always been a fan of gingerbread-like desserts, but this cookie takes it to a new level. It’s made with fresh ginger and ground black pepper. It’s slightly crunchy on the inside, but soft and chewy on the inside. Darn near perfect when it comes to cookies.

When I tried it, the idea of both fresh ginger and black pepper in a cookie were new to me. I’ve wanted to try making something similar ever since. I think creating the right cookie texture is going to take me much more practice than I am able to commit to this holiday season, so I went the easy route and incorporated the flavors into a bar.

It’s certainly not an exact replica, but for someone who can’t get enough gingerbread this time of year, these chewy, spicy cookie bars hit the spot.

Ginger Molasses Cookie Bars

Makes: 16 bars

Ingredients

1 cup unsalted butter, softened
1/3 cup coconut sugar
1/3 cup + 1 tbsp turbinado sugar
2 tbsp molasses
1 large egg
½ tbsp grated fresh ginger
1 cup white whole wheat flour
½ tsp baking powder
¼ tsp salt
¼ tsp ground black pepper
1/8 tsp ground cinnamon
1/8 tsp ground nutmeg
1/8 tsp ground clove

Prep

Preheat the oven to 350 degrees F. Grease an 8 x 8 inch baking pan lightly with unsalted butter.

In the bowl of a mixer fitted with the paddle attachment, add the butter, coconut sugar and 1/3 cup of the turbinado sugar. Cream together on medium to medium-high speed, about 2 minutes. Add the molasses and mix for about 30 more seconds, scraping the sides of the bowl as needed.

Add the egg and mix 30 more seconds. Mix in the fresh ginger.

In a small bowl, stir together the flour, baking powder, salt, pepper, cinnamon, nutmeg and clove. With the mixer on low, gradually add the dry ingredients. Increase the speed to medium and mix just until all ingredients are combined.

Transfer the cookie dough to the prepared pan and spread evenly with a spatula. Sprinkle the top with the remaining 1 tablespoon of turbinado sugar.

Bake for 18 to 20 minutes, until the edges begin to brown and a toothpick inserted in the center comes out clean. Let cool completely and cut into 16 bars.

Friday is a good day for news, right?
 
As in, big news.
 
As in, life is being flipped upside down, but in a very good way kind of news. 
 
As in, we’re moving from central Kentucky to the East Bay in California news!
 
Perfect because I was so ready to share that! And we are so excited!
 
From the food perspective, just in case you are unaware (although I doubt you are), the East Bay is a incredible food destination. Well, really the entire area. In addition to a past stop in San Francisco, I’ve visited twice so far in the moving process. In that short amount of time I’ve enjoyed Peruvian cuisine, vegan soul food, seafood, Montreal-style bagels, Hong Kong-style bakeries, craft beer, and of course, wine. 
 
Then there are the amazing Farmer’s Markets. The fact that I will have access to fresh figs, nuts, artichokes and avocados is surreal for me. Yes, you should expect some posts soon! 
 
And fortunately, there are lots of places to run. I think all the food access may have subconsciously played a role in my decision to register for the San Francisco Marathon in 2013! 
 
I should finally arrive in California on New Year’s Day so Christmas will be light around here, but I still plan to get in plenty of baking. I may not have a tree up, but I refuse to pack the mixing bowls and cookie sheets just yet. 
 
As for right now, I just got back from a California visit and you’ve probably noticed my week long blogging break has turned into almost two. I’ll be back in the kitchen this weekend, but I want to kick off the Christmas season with a cookie round up. 
 
If you are looking to add some cookies made with whole grain flours and minimally refined sugars to your baking list, look no further. Some traditional treats are mixed in, but many of these fit those criteria.

Eggnog Latte Cupcakes

 My favorite holiday coffee drink becomes a dessert in this recipe for eggnog latte cupcakes!

What’s the first food or drink you think of when you hear the word culture?

For me, it’s coffee.

Coffee brings about memories of travel and some of my favorite places in this world. And it’s not just the coffee itself that I enjoy; it’s the culture that surrounds it. I love to smell it brewing in the morning, and sharing a cup over conversation with my husband or friends. I find it fascinating to watch it grow in the fields, and I feel fortunate to support those who grow it as they share a piece of their world with me in each cup. 

So a few weeks ago when I was asked if I would like to review a very special coffee, I was given a great opportunity to offer my support. 

Equal Exchange buys products directly from small-scale farmer cooperatives for Fair Trade prices. Then they pass these amazing things on to us in the form of chocolate, cocoa, tea and coffee. The Congo Coffee Project was created by Equal Exchange in partnership with Panzi Hospital in the Democratic Republic of Congo. 

The Congo Coffee is a blend of African coffee beans that was described to me as smooth and balanced. I have to agree. I took it to work with me this morning and enjoyed every sip. This is a coffee that is worth an online order. 

This is coming from someone who still recruits friends and colleagues to bring me coffee from Brazil, and who stocks up on 100% Blue Mountain coffee any time my feet touch ground in Jamaica.  Yes, I love quality coffee.

When I agreed to review the coffee, I knew that I couldn’t show you a simple cup of coffee and be done with it. Although, a simple cup alone is worth a photo and sip. No, I needed to figure out a way to get it into some of my baking. 

My favorite holiday coffee drink turned cupcake? That will work.

These Eggnog Latte Cupcakes start with a rich chocolate, coffee-flavored cake that uses virgin coconut oil, mascavo (muscovado) sugar and white whole wheat flour. Feel free to substitute butter, brown sugar and your favorite flour, if you desire. 

Although, I will say that these are made only slightly sweet on purpose. The eggnog frosting on top is the real deal and full of sugar. I wanted a less sweet cake to balance out the frosting so my final produce wouldn’t make your teeth hurt. The minimally refined sugar and strong brewed coffee did the trick.

Eggnog Latte Cupcakes
Makes: 8 cupcakes
 
Ingredients
 
Cupcakes 
3 ½ tbsp virgin coconut oil, soft, at room-temp
½ cup mascavo or muscovado sugar
2 large eggs 
3 tbsp Congo Project Coffee, brewed strong and cooled 
¼ cup cocoa powder 
½ tsp baking soda 
½ cup white whole wheat flour 
1/8 tsp nutmeg 
½ cup plain Greek yogurt
Eggnog Frosting 
½ stick (1/4 cup) unsalted butter, softened
2 ½ cups confectioners sugar 
7 tbsp eggnog 
1 tbsp coffee, ground extra fine
Prep
Preheat your oven to 350 degrees F. Line a muffin tin with 8 cupcake liners. 

In a bowl of a mixer fitted with the paddle attachment, combine the coconut oil and sugar. Mix for about 2 minutes, until almost smooth. Beat in the eggs, one at a time. Add the coffee. 

In a separate bowl, stir together the cocoa powder, baking soda, flour and nutmeg. Gradually add the dry ingredients to the batter. Mix just until combined. Fold in the yogurt. 

Divide the batter evenly among the 8 cups in the tin. Bake for 18 minutes or until a toothpick inserted in the center comes out clean. Remove from the oven and cool completely. 

For the frosting, combine the butter and confectioner’s sugar in a mixing bowl and mix on medium and then medium-high until well combined. Slowly add the eggnog, 1 tablespoon at a time. Frost your cupcakes once cool and sprinkle each with a dusting of finely ground coffee.

Bobby Flay’s Brussels Sprouts

My addiction to Brussel Sprouts has reached epic proportions. I can’t seem to get enough of the veggie. As a child, it wasn’t even fair for me to say I didn’t like them because I had honestly never tried them.

In fact, it took fellow food bloggers raving about them and some local pastured pork bacon to convince me I needed to try them as an adult. Now, I could have them every week without complaint and I’ve been fixing them almost that often throughout the holiday season.

Even though I love the tiny cabbages, I’ve fallen into a bit of a rut regarding preparation. Bacon and freshly grated parmesan cheese is the standard. I decided it was finally time to break out of the rut when I saw Bobby Flay’s Roasted Brussels Sprouts with Pomegranates and Vanilla-Pecan Butter on the Thanksgiving Throwdown episode. I was intrigued by the sweet, salty and nutty combination.

Back in the summer I received some POM Wonderful juice and never found the time to post about it, so I used POM to make my pomegranate molasses. I looked up a few recipes, but just ended up combining a small bottle of the juice with 2 tsp of sugar. I cooked it down until it was thick and syrupy.

I also used pure vanilla instead of vanilla bean. I realize this is likely a culinary sin, but I’m not ready to break the bank on vanilla bean just yet. I find cooking with quality ingredients on a budget is all about priorities and vanilla bean just hasn’t hit my list yet.

The recipe was really quick and easy and would be even more so if you already had the molasses made up. It was one of the most interesting flavor combinations I’ve had in a while. Tart, rich, savory, sweet, nutty, crunchy – you really can’t use one term to describe it all and with me around there were no leftovers!

Cherry Nut Cookies: The Last of the Holiday Cookie Tray

I really like fruitcake, but I know that not everyone is a fan. These Cherry Nut Cookies take all the best parts of a fruitcake and put them into a dessert that everyone will love! They are modified from one of my favorite cooke recipes by Ina Garten. 

 

I’m not one to complain about food often, but I have to admit, I am so tired of cookies. Give me a couple weeks and I’m sure I will welcome them once again, but right now, I don’t want another bite.

Even though they have worn out their welcome with me, I still wanted to share a recipe with you since I did not get to before Christmas. No worries though. These cookies are perfect for New Years and Valentine’s Day too.

I’ve made this recipe before; the original is called Dried Fruit Cookies by Ina Garten. They are delicious unaltered, but this year I put a little twist on them using less fruit and substituting my favorite lesser refined sugars and whole grain flours.

The result was just as tasty, but was changed just enough to create a whole new cookie. They have a festive holiday flavor because of the cloves, but they really are perfect for any time of year. Add some dried blue berries for a patriotic holiday, or keep them all red for Valentine’s day.

I tried like crazy to find candied cherries without HFCS this year. I ordered from a company online which did not have HFCS on the ingredient label posted. Got my order and HFCS was the 2nd ingredient. They refunded my money, but what a disappointment. If you have a resource, please pass it on!

Be sure to start these cookies ahead of time. The fruit and nuts need to soak and the dough needs to be stored in the refrigerator for at least an hour before baking.

Cherry Nut Cookies | Fake Food Free

Cherry Nut Cookies
Adapted from Dried Fruit & Cookies by Ina Garten

Makes: 2 1/2 to 3 dozen cookies

Ingredients

 

½ pound candied cherries, halved
1 tbsp local honey
2 tbsp spiced rum
1 tbsp orange juice
½ cup pecans, chopped
1 cup unsalted butter, softened
½ tsp ground cloves
½ cup Demerara sugar
1/3 cup muscavo sugar
1 egg
¼ tsp salt
2 2/3 cup white whole wheat flour

Prep

Combine the cherries, honey, rum, orange juice and pecans in a small bowl. Cover and let sit at room temperature several hours or overnight.

In a mixing bowl, combine the butter, cloves and sugars. Cream until smooth, about 2 minutes. Mix in the egg. 

Add the salt and gradually add the flour, mixing just until combined. Mix in the fruit and nuts along with any liquid. Separate the dough into two portions.

Place each piece of dough on a sheet of plastic wrap. Shape into a log and wrap tightly. Refrigerate for 1 to 3 hours or until firm.

Preheat the oven to 350 degrees F. Slice the cookies with a serrated knife, about ½ inch thick. Place cut side down on an ungreased cookie sheet. Bake for 12 to 15 minutes, or until edges are slightly browned and cookies are firm. Cool on a wire baking rack.
