Smoked Almond, Chocolate Chip and Coconut Cookies

July 23, 2015

Back in May I had the opportunity to attend a food blogger event for the launch of Safeway’s Open Nature Super Premium Ice Cream. This post is a recap of the food and fun that led to the creation of these Smoked Almond, Chocolate Chip and Coconut Cookies!      Smoked Almond Chocolate Chip and Coconut Cookies | Fake Food Free

It’s not everyday that you get invited to taste ice cream. Well, okay. It probably happens a little more often for a food blogger than the average person, but that makes it no less exciting.

Back in May I got invited to hang out with a great group of food bloggers to learn about the launch of Safeway’s Open Nature Super Premium Ice Cream. I’ve been really curious about the Open Nature brand and I was completely sold on checking out Safeway’s commercial kitchen so I took the short drive to Pleasanton for an incredibly fun few days.

I have to be completely honest. You know I make a lot of things. Many things from scratch that most people buy at the store. But after several years of my from-scratch lifestyle there are a few things that I’ve voted best made by the professionals. Ice cream is one of those for me.

Chocolate Cherry Goji Bars from Superfood Snacks

July 17, 2015

Chocolate Cherry Goji Bars from Superfood Snacks by Julie Morris | Fake Food Free

There is a good chance that just opening this book will make you healthier. I know it’s a pretty bold claim, but I’m certain it’s true.

I received a review copy of Superfood Snacks: 100 Delicious, Energizing & Nutrient-Dense Recipes by Julie Morris a few weeks ago and it has been sitting on my desk glowing with health and vibrance ever since. I gladly accepted the offer from Navitas Naturals to review the book. They even sent along some goji berries and cacao nibs so I could make this recipe. But I wasn’t sure what to expect until I finally go the copy.

It turns out, I’m kind of crazy about it.

Grilled Pizza with Scallops, Shallots and Arugula

July 1, 2015

As a member of the Cultivar Wine Bloggers club, I receive quarterly shipments of their outstanding wines to pair with my recipes. This month I took things outdoors with grilled pizza and the 2014 Cultivar Rutherford Sauvignon Blanc.  Grilled Pizza with Scallops, Shallots and Arugula paired with Cultivar Rutherford Sauvignon Blanc | Fake Food Free

If you told me I could only grill one thing for the entire summer, my pick would be pizza. I might miss the grilled vegetables, maybe the meats, and most definitely the fruits, but having grilled pizza in front of me with the smoky, slightly crisp crust and the bubbly cheese would make it all better.

We only just began grilling pizzas a few years ago and it was love at first slice. Since then I’ve experimented with different whole grain crusts and garden-fresh toppings as well as the best way to cook it.

While I’m a huge fan of the traditional with tomato sauce and mozzarella, I also like to step out of the box with some more original combinations.

Bourbon Cocktails for Derby

April 28, 2015

I’m stepping outside of Kentucky this week and giving Oregon bourbon a try! These Derby-inspired cocktails are made with Burnside Bourbon provided by Eastside Distilling in Portland, Oregon.

After 10 years living in the Bluegrass state, it’s no surprise that I rarely look beyond Kentucky for my bourbon. It’s good stuff. Pretty much the whole world agrees.

But as we explore new craft spirits, I’m trying more and more that I like, including bourbon. We are in California now, of course. So maybe it’s time to celebrate Derby week with something a little more local, or at least on the same coast.

Growing up, like most people who come from the middle portion of the U.S., comfort food was defined by things like mashed potatoes, pot pies and biscuits and gravy. Heavy, nap-inducing and delicious.

Fortunately, travel has introduced me to a few more things that define comfort food for others around the world. Feijoada in Brazil, fish and chips and pastries in Europe, but nothing can compare to noodle dishes in Southeast Asia. They have redefined comfort food for me.

Starry Starry Nights Chocolate Cookies

March 3, 2015

These chocolate cookies are so rich and delicious! Made with almond flour, they also happen to be gluten-free and grain-free, so they are perfect for sharing with friends. You’ll find these cookies and so many more great desserts in the new cookbook Let Them Eat Cake by Gesine Bullock-Prado.

I’ve mentioned many times before that I’m not grain-free, gluten-free, vegan, or most other food labels out there. I also feel incredibly fortunate that I don’t have any food allergies. That being said, the one thing I am when I cook and bake is a bit of a pleaser.

If I invite you over, give you a food gift, or share a potluck with you, I want you to be able to eat. Not eating sounds like no fun at all. So any tool that helps me help more people eat good food, well, I’m all for it.

It’s rare to come across a cookbook that is for everyone. One that you can buy for anyone on your gift list and one that you can use to make sweet treats for anyone you might be eating with. I’ve found it though, and to be honest, I’m pretty blown away by it. It’s downright awesome.

Slow Cooker Maple Jalapeno Chicken Sliders

February 26, 2015

These Slow Cooker Maple Jalapeno Chicken Sliders have a flavorful balance of sweet, salty and spicy. Crown Maple gave me a sample of their delicious organic maple syrup at the Winter Fancy Food Show last month and it made the perfect addition to this easy meal!

I learned long ago that there is no denying my sweet tooth. Yes, you can calm it down by cutting out all forms of added sugar. I did that a couple years ago. Cravings subsided, and even now I don’t like things nearly as sweet as I used to, but the sweet tooth never really went away.

If you have a sweet tooth, you know what I’m talking about.

People tend to fall into a sweet or salty category. Some have no desire for any type of sugar. But threaten to take away their potato chips, and look out! Meanwhile, if you told me I could never have a potato chip or pretzel again I would not shed a single tear. But let’s not talk about the horror of never having caramel, chocolate, or my favorite sweetener, maple syrup.

Grain Free Pizza Crust from Everyday Grain-Free Baking

February 20, 2015

I found this grain free pizza crust in my review copy of Everyday Grain-Free Baking by Kelly Smith. I quickly became a huge fan. It’s a variation that everyone will love regardless of your personal eating style.

Grain-free, Gluten-free Pizza Crust from the cookbook Everyday Grain-Free Baking | Fake Food Free

Everyone has an opinion about grains these days. Some people limit them because they think it helps them lose weight, or because they follow a specific eating style. Others stay away from the gluten in grains out of necessity due to a diagnosed medical condition, or because it makes them feel better. Grains are in the spotlight right now for better or worse, no doubt.

I don’t speak much about the topic because opinions are so strong on every side of the argument. What I am happy about is that all this grain talk has given those with medically diagnosed gluten allergies many, many more food options and I think this is a great thing.

I can only speak to my own experiences. I am not gluten free or grain free. Neither make me feel bad as others claim they do, and yes, I have experimented with cutting them out. I completely respect that your story might be that your life changed after cutting them out, but that story isn’t mine.

Crispy Egg Custard Tarts (Pastéis de Nata) from My Portugal by George Mendes

February 3, 2015

These egg custard tarts are a classic Portuguese dessert and one that brings fond memories of our time living in Brazil. I was so happy to find a good recipe in the cookbook My Portugal by George Mendes so that I could make them in my own kitchen and share the recipe with you.

I was sitting with my friends Juliana and Fernando enjoying a bowl of Caldo Verde on one of the rare cool days that occur during the months of June and July. It was the week of the world food festival in Maringa-PR, Brasil, when the town square turns into a food-lovers paradise with booth after booth of edible offerings representing numerous countries around the world.

Beef Medallions with Spinach and Arugula Paired with Cultivar Wine

January 26, 2015

Special meals don’t have to be complicated. These beef medallions are quick and easy. They pair so well with the excellent 2012 Howell Mountain Cabernet Sauvignon I received from Cultivar Wine.

Fancy is not a word that I would use to describe my cooking. Most often from scratch, sometimes simple, other times complicated, but not exactly fancy.

But every now and then I get the opportunity to make something a little special. Like when you receive an elegant, yet approachable bottle of fine wine.
