Savory Squash and Healthy Supermarkets

I’ve really gotten into the pumpkin craze and have been amazed at all the recipes floating around. I still tend to lean towards sweet with my pumpkin and butternut squashes so I continue to look for more savory recipes.

I found this one for butternut squash, but I didn’t have it on hand at the moment. I decided to try it with pumpkin instead since I had some already roasted and waiting to be used.

I loved the combo although I think next time I will caramelize the onions before throwing them in. They needed to be more soft and tender.

Savory Pumpkin Side
Modified from Amazing Butternut Squash

2 cups roasted pumpkin puree
½ cup mayonnaise
½ cup onion, finely chopped
1 egg
1 tsp brown sugar
Salt and pepper to taste
¼ c crushed crackers, cereal or bread crumbs
2 tbsp grated Parmesan
1 tbsp butter, melted

Mix first 6 ingredients in a bowl until combined well. Transfer to a baking dish. Mix butter, Parmesan and crumbs and sprinkle on top of pumpkin mix. Bake uncovered at 350 degrees F for about 35 minutes or until bubbly.

If you are located near a Trader Joe’s let me say I am so jealous and I hope you have counted your blessings. I love that store and have only been able to go when I travel. I keep telling my husband we should base our next move on their locations!

We had a SuperTarget near us when I was in undergrad and I loved that too. I was always able to find unique and fun things there. I was also able to visit a Harris Teeter while traveling in Alexandria, VA and really liked it.

    I can’t believe food lion made this list! They are usually so dirty! I <3 publix, harris teeter, trade joes and whole foods!

    I have to tell you how much I miss Safeway since moving away from California. I lvoe a couple of the local chains here in Minnesota, Lund’s & Kowalski’s

    I’m jealous of people that can go to a Trader Joe’s too! Whole Foods for that matter.

    That’s a really interesting recipe. Such unique ingredients! I’ve never been a huge fan of pumpkin, but I find that I’m coming around to it. Still, I might make it with butternut the first go around!

    good question! I live closest to a Safeway, but hate it because they never have anything stocked. My favorite is trader joes! But it is a 20 min drive away – wish they would come closer to me! I have never been to a SuperTarget, but I love regular Target, so I am sure I would like that!

    Looks like there are some other Trader Joe’s fans out there. I love their dark chocolate. Yum!

    kat – I found I liked a lot of the more local chains in KY as well.

    cathy – I think the bnut squash may even be better. I plan to try it.

    lauren – The SuperTarget we had in Lafayette, IN was so cool. Lots of store brand, healthy foods and good produce.

    Hannaford is a very popular chain in New England, they are great!
    You know we just got a Trader Joe’s in Warwick, Rhode Island, but they don’t sell wine 🙁 , Rhode Island laws.
    It just openned November 1st, and it is so packed you have to wait for a shopping cart at the parking lot.
    We have Whole Foods around here but they are really expensive when you compare them with Trader Joe’s.
    Publix in Florida have the best bakery of any grocery stores we have known around the country and they are awesome, mainly due to the fact that Publix still is a family run business.
    We have many small grocery stores in Rhode Island, they are locally owed and we prefer them because we find different brands and products the big chains don’t carry, Rhode Islander’s have been able to protect the small chains and keep the big chains off for the longest time.

    On another note, I haven’t forgot to check for the best flour brands in Brazil.
    I am going to be in Sao Paulo next week on business and I will talk to my friend who will give me the tips on that.

    TJ’s, Whole FOods and Safeway are definitely in my top 3. Safeway is great value for most basics, TJ’s has a little more imagination and great prepared foods at good prices and Whole Foods of course makes me feel good enough about trying yummy organic things that I can forget about the dent it’s putting in my wallet 🙂

    zesty – I feel ya, nothing to compare it to in Brazil either. There is one good store in a city about 5 hours from here, but nothing in the town I’m living in. I have to enjoy through everyone’s blogs! 🙂
